Mango Mousse Cake

Weekends are for some fun, quality family time, and one of our favourite things do to is to try out new, easy recipes! We’ve got you one of our favourite cake recipes today that involves absolutely no baking! A great way to involve the kids in prep time, isn’t it?

This special mousse cake tastes fresh and light, and is sure to become a summer delight at your home!

Ingredients

  • 2 large mangoes
  • 18-20 digestive biscuits or any biscuit that you have lying at home
  • 1/4 cup of melted butter
  • 1 to 1.5 cups of whipped cream
  • 3 tablespoon white powdered sugar or more depending on how sweet your mangoes are.

Method

1. Break the biscuits and ground them to make fine crumbs using your hand or a blender.

 

2. Add the melted butter to the biscuit crumbs and press the mixture firmly into the bottom of the pan

3. Take one cut fresh mango in another bowl and make fresh mango puree and keep aside for resting.

4. In another bowl take 1 cup of whipped cream and fold it in as light as possible.

5. Then add the white powdered sugar, a little at a time and keep mixing it with the whipped cream.

6. The add the mango puree to the mixture and mix well

7. Now transfer the whipped cream and mango puree mixture on top of the biscuit layer prepared before. Make a good thick layer and place to refrigerate for at least an hour.

Dash on some fresh mangoes to add to the visual appeal of this scrumptious cake, and enjoy!
