Tofu in Holy Basil Sauce

Tofu is entirely made of soybean curds, making it very low in calories. It is also a great source of calcium and iron.
Holy Basil, is a well known Indian herb, also called as Tulsi. It has various health benefits and is a good source of vitamin A and C, calcium, zinc and iron. It is not only good for bodily health but also helps reduce stress.

Ingredients

  • Extra firm silken tofu
  • Onions
  • 2 green chilies
  • 8 cloves of garlic
  • Roasted cashew
  • Light soya sauce
  • Dark soya sauce
  • Vegetable stock
  • 1 teaspoon cornflour
  • Jaggery
  • Basil leaves
  • Salt

Method

1. Dry out the tofu by wrapping kitchen rolls around it. Make sure it’s fully dry.
Now cut the tofu into pieces and brown it in a pan for few seconds without oil.
De-seed the green chilies and put it in a mortar, along with some garlic. Crush these.
Put some olive oil in a pan and add the crushed chilies and garlic, along with some chopped onion and roasted cashew. Sautee it for 20 seconds.
Now add the tofu.

2. To make the Sauce

Make a sauce by mixing 2 tablespoons of light soya sauce, 1 tablespoon of dark soya sauce, vegetable stock, 1 teaspoon of cornflour and jaggery. Put this into the pan, and let all of it cook together for sometime.
Finally, add a handful of basil leaves.
You may taste and check before adding salt to the preparation.
Serve hot.
