Mango Phirni

Who does not love mangoes! We wait for months to get sweet mangoes back in season. It’s the season for mangoes, and everyone in the house gets crazy for mango recipes. So, we ended up making mango Phirni. Let us grab everything we would need for this recipe, and let us get started.

Ingredients

  • 1l Milk
  • 50 gms Rice
  • Kesar
  • 100gms of sugar (more or less depending on the amount of sweetness you want in your phirni 🙂
  • 2 Mangoes Puree
  • One spoon of Cashew Paste
  • Pistachio
  • Elaichi

Method

1. Boil 1 liter of Milk. (Keep it at low temperature)

2. Soak 50gms of Rice in water for half an hour, then grind to a grainy paste. (Make sure your paste is kind of grainy)

3. Don’t forget to stir your Milk and put the grainy paste into the boiling Milk, and keep on stirring.

4. Add a pinch of Kesar and one spoon of Cashew paste into it.

5. Add 2 Mangoes Puree to the pan and keep stirring. Add in some ground cardamom ( elaichi) and stir well till the spoon comes out fully quoted.

6. Now, add 100gm of sugar, more or less depending upon how sweet your mangoes are.

7. Stir the pan for a little time, and your ‘Mango Phirni’ is ready

8. You can sprinkle some more pistachio for garnishing.

These ingredients are an approximation to taste. You can add what you like as per your taste palette. This recipe is close to my heart as I have grown up eating it and no matter how sick I feel I always love this.
